How to Make Pork, Apple and Leek Rolls

  1. Preheat the oven to 390°F/200°C.
  2. Heat 1 tablespoon of vegetable oil in a skillet over medium heat.
  3. Add the mustard seeds, leek, and cook them for 2-3 minutes.
  4. Add the apple, minced pork, and cook everything for 10 minutes. Season with salt, pepper, and thyme.
  5. Place the puff pastry on your working surface and slice it in halves. Place a strip of meat mixture in the center of the halves.
  6. Brush the edges of the pastry with whisked egg.

Ingredients Needed for Pistachio Cream-Filled Eclairs


For the eclair dough:

1 cup milk
½ cup water
2 tablespoons of sugar
1 teaspoon salt
5 ounces of butter
7 ounces of flour
4 eggs

For the biscuits:

1 cup flour
1 cup brown sugar
7 ounces of butter

For the pistachio cream:

4 eggs
1 cup flour
1 cup powdered sugar
3 cups of milk
4 ounces of pistachio paste
5 ounces of whipped cream
4 figs, thinly sliced

How to Make Pistachio Cream-Filled Eclairs

  1. Preheat the oven to 350°F/175°C.
  2. Heat a saucepan over low heat. Add the milk, water, sugar, and salt.
  3. Add the butter, and slowly mix with a spatula, so it can melt and be absorbed into the liquid.
  4. After it is melted, add the flour and incorporate it into the liquid. Stir, until you obtain a dry, golden dough. When it’s ready, add it in a mixer bowl.
  5. Crack the eggs in a large bowl, whisk, and pour them into the mixer bowl. Turn on your mixer and mix for 3-4 minutes, until smooth. Add the dough into a piping bag.
  6. Line a baking tray with parchment paper. Pour the dough with the piping bag in about 3 inches (7.5 cm) long eclairs. Use all of the dough to make as many eclairs as you can.
  7. To make the biscuits: add all the ingredients in a mixer bowl and mix until you get a smooth dough, with the aspect of breadcrumbs.
  8. Place the dough over a wooden board and press it with a wooden board. It should be around 0.2 inch (0.5 cm) thick. Score with a knife and make rectangular biscuits. They should have the length and width of the eclairs.
  9. Add each biscuit over 1 eclair.
  10. Slide them into the oven for the next 30 minutes.
  11. To make the pistachio cream: add the eggs, 1 1/2 cups of milk, and powdered sugar, in a bowl. Mix until you get a smooth mixture.
  12. Heat the remaining milk into a saucepan over low heat. Sift the egg and milk mixture and add it into the pan. Add the pistachio paste and whisk for a few minutes until you get a smooth, thick cream. Refrigerate the paste for 1 hour.
  13. After you take the pistachio cream out of the fridge, incorporate the whipped cream. Add the mixture it into a piping bag.
  14. Slice the eclairs through the middle and fill them with the pistachio cream. Top it with a few slices of figs and close the eclairs.
  15. You can serve the eclairs with powdered sugar on top!

How to Make Mozzarella and Cheddar Pastries

  1. Preheat the oven to 350°F/175°C.
  2. Place the flour in a large bowl. Add a pinch of salt and olive oil. Slowly add the water while gently stirring the flour. Knead the dough until it has a sticky texture.
  3. Spread some flour on your working surface and add the dough in the middle of it. Knead the dough until firm, smooth, and elastic, for about 8 minutes.
  4. Pinch off a piece of the dough and gently roll between your hands to form 2 inches (5 cm) balls. You should have 15 balls. Continue shaping until all the dough is used.
  5. Grab each ball and level them with a rolling pin. Grab a knob of butter on the tip of your fingers and spread it over each dough round. Place them in stacks of 3 with butter on the sides so you can stick them. You should have 5 stacks.
  6. Again, spread flour on your working surface. Grab a stack of dough and level it with a rolling pin. Do it until you get 12 inches (30 cm) in diameter. Evenly spread shredded mozzarella over it.
  7. Now, fold from the left side towards the middle and spread butter. Fold it from the right side towards the middle and again spread butter. Fold it from the upper side towards yourself until you reach the middle and spread butter. Finally, fold it from the down side towards the middle and again spread butter.
  8. Add about 1 tablespoon of shredded Cheddar in the corners of the dough. Now grab each corner and wrap them towards the middle.
  9. Repeat for the remaining 4 stacks.
  10. Crack the eggs and whisk them.
  11. Line a baking tray with parchment paper. Place the pastries in it and coat them with the egg mixture.
  12. Slide the pastries in the oven for the next 25 minutes.

How to Make Oregano and Mozzarella Tart

  1. Preheat the oven to 360 degrees F/180 degrees C.
  2. Add the garlic, fresh oregano, melted butter, and olive oil in a food processor and blend them until you get a creamy mixture. Season it with a little bit of salt.
  3. Generously cover your work surface with flour and roll out the puff pastry.
  4. Using a brush, evenly spread the oregano mixture on the puff pastry surface.
  5. Sprinkle the chili flakes on top.
