How to Make Roasted Pork Sirloin With Apple Mash

  1. Stuff the pork with most of the apricots, leaving one or two for later usage.
  2. Sprinkle the sirloin with the salt, pepper and curry powder on all sides.
  3. Cook it in the vegetable oil for around 4-5 minutes or until it turns golden brown. Set aside.
  4. Smear a ceramic dish with 1 cube of butter.
  5. Place the cooked meat into the dish together with the rosemary sprigs.
  6. Bake in the oven until the thermometer reaches 185 – 195 degrees F/85 – 90 degrees C.
  7. In the meantime, throw the sliced apple, ginger and the remaining dried apricots into a pot half filled with boiling water.
  8. Boil the apple for 25 minutes.
  9. Place the ingredients in a bowl, add the rest of the butter and mash all together. Squeeze the lime into the mixure.
  10. Add the red bell pepper and mix using a spoon.

2 tablespoons of tomato sauce
0.5 curry paste
1 garlic clove, slices

1 cup chicken stock

How to Make Pangasius in Tomato Sauce

  1. Heat 1 tablespoon of vegetable oil in a skillet, then add the butter and melt it.
  2. Lay the pangasius fillets in the skillet and season it with salt and pepper. Cook the fish for about 7 to 9 minutes, on medium heat, turning it once.
  3. When the time is almost up, pour fish stock over the fish fillet, then add the tomato sauce and curry paste.
  4. Spread the sauces over the fish, turn it over again and cook it for 1-2 more minutes to absorb the flavors.
  5. Take a stainless steel skillet and heat some more vegetable oil in it.
  6. Add the garlic slices. When the garlic starts browning, add the basmati rice, coriander powder, pepper, salt, and turmeric.
  7. Cook the basmati rice in oil stirring often.

How to Make Roasted Chicken Thighs With Crunchy Rice

  1. Fill a saucepan about half way with water. Add a pinch of salt and bring it to a boil.
  2. Add both types of rice and cook them according to the instructions on the package. Be careful because the cooking time may vary, so you should first add the rice that needs more time to cook. When the rice is cooked but still firm when bitten, drain it and set it aside.
  3. In the meantime, toast the walnuts, pine nuts, and seeds in a skillet for 1-2 minutes.
  4. Preheat the oven to 360°F/180°C.

1 teaspoon cinnamon

For the platter:

½ cup yogurt
fresh coriander leaves, chopped (for garnishing)
1 cup cooked basmati rice

How to Make Chicken Tikka Masala With Basmati Rice

  1. For the marinade:

    Add the chicken breast, yogurt, curry powder, and lime juice to a bowl. Season with salt and pepper and mix to completely coat the chicken breast. Marinate overnight.

  2. For the spicy tomato sauce:

    Heat the olive oil in a skillet over low heat and add the onion. Cook and stir until tender.

  3. Add the garlic and chili. Cook and stir for 30 seconds. Add the cinnamon and cumin. Stir again for 30 seconds or so.
  4. Add the tomato sauce and water. Stir them in, bring to a boil, then simmer for 12-15 minutes. Continue to stir in the process. Set aside.
