12 ounces of lamb shoulder, thick dices
¼ cup vegetable oil
salt
pepper
2 fresh thyme sprigs
3 garlic cloves, sliced
½ cup dried cherry
½ cup dried apricot
1 cup red wine
2 cups of beef stock

How to Make Braised Lamb With Dried Fruit

  1. Heat the oil in a skillet over medium-high heat. Add the diced lamb and cook it until browned on all sides, while stirring often.
    Season it with salt and pepper, thyme, and garlic. Cook for around 5 minutes.
  2. Add the dried cherries, apricots, and the red wine. Bring to a boil and reduce the heat. Cook until the wine reduces by half.
  3. Pour the beef stock, and simmer for around 30 minutes, on low heat, until the meat is tender, and the sauce is thick and glossy.
  4. You can serve it with a nice side of mashed potatoes!

½ zucchini, sliced in sticks
1 tablespoon vegetable oil
salt
2 garlic cloves
¼ onion, thinly sliced
½ cup tomato sauce
7 ounces of leftover turkey
2 tortilla wraps
2 lettuces leafs
2 tablespoons of yogurt

How to Make Turkey and Zucchini Tortilla Wrap

  1. Heat 1 tablespoon of vegetable oil in a skillet over medium heat.
  2. Add the zucchini sticks and a bit of salt.
  3. Cook them for 2-3 minutes and then add the garlic. Leave it in the pan for 1 minute then remove it. Add the onion, and tomato sauce. Cook until the sauce reduces by half.
  4. Heat the remaining oil in a skillet over medium heat.
  5. Add the turkey leftovers and cook them for 2-3 minutes.
  6. Heat the tortilla wraps, in a skillet, for around 1 minute, flipping it over once.
  7. Place the tortilla wraps on your working surface. Top each tortilla with 1 lettuce leaf, half of the turkey and half of the zucchini mixture.
  8. Serve the tortilla with 1 tablespoon of yogurt on top.

How to Make Fried Duck Breast With Sweet Braised Cabbage

  1. Place the duck breast on your working surface.
  2. Make diagonal cuts over the skin of the duck breast. Season it with salt and pepper.
  3. Heat a skillet and place the duck skin-side down at low heat so that the fat can melt and the skin turns crispy.
  4. Afterwards, fry the duck on each side so that it is properly seared.
  5. Cook it for about 5 minutes on the skinless side then turn it over and leave it on heat for 4 more minutes.
  6. Heat a skillet over medium heat and add almonds, raisins, red onion, and a drizzle of olive oil. Add the red cabbage and season it with salt and pepper. Cook everything for 5-6 minutes.

How to Make Lamb Mince and Mashed Potato Cheesy Casserole

  1. Preheat the oven to 360°F/180°C.
  2. Bring a pot of water to boil. Peel and cut the potatoes. Add them to the boiling water and cook until fork tender (usually about 20 minutes).
  3. Move the potatoes into a separate bowl and optionally add butter and milk. Mash everything until smooth. Let the mashed potatoes aside.
  4. Heat the vegetable oil in a skillet over medium heat. Add the lamb mince and season it with salt and pepper.
  5. Cook it for a few minutes until the meat starts to brown, and add the garlic, onion, carrot, tomatoes, and mushrooms. Put a lid on top of the skillet and cook the lamb mince for 4-5 minutes.
  6. Add the tomato sauce, parsley, and keep cooking until the tomato sauce reduces by half.
  7. Add the lamb mixture on the bottom of an oven tray. Top it with the mashed potatoes, and then with Cheddar.
  8. Roast the casserole for the next 35 minutes!

How to Make Spaghetti and Meatballs

  1. Crack the egg and whisk it.
  2. In order to make the meatball mixture, use a large bowl and combine the chicken mince with whisked egg, onion, parsley, and breadcrumbs. Pinch off a piece of the meat mixture and gently roll between your hands to form small meatballs, around 1 1-2 inch (2,5 cm – 4 cm) in diameter. Continue shaping until all the meat is used.
  3. Heat vegetable oil in a skillet on high-heat. Add the meatballs and fry them for about 5 minutes, while turning them on all sides, to evenly cook them. Remove the meatballs from the heat and leave them aside until you make the sauce.
  4. Separately, bring a large pot of salted water to a boil. Add the spaghetti and cook them according to the instructions on the package.
  5. For the spaghetti sauce, add the olive oil in a heated skillet and throw in the garlic cloves. Leave them on heat for about half a minute in order for them to leave their flavor in the pan. Add the tomato sauce and bring to a simmer. Season with chili flakes, salt and pepper. Add the meatballs and stir so that they can absorb the sauce. Cook for 2 minutes more. Add some chopped parsley on top.
  6. Top the spaghetti with the meatballs and serve them with shredded parmesan!

How to Make Bolognese Sauce

  1. Thinly shred the carrots and onions.
  2. Heat the vegetable oil in a skillet on a medium heat and cook the carrots and the onion until softened, around 5-6 minutes.
  3. Add the garlic and oregano.
  4. Increase the heat to medium-high and add the ground beef. Cook it for about 4-5 minutes, until it is browned all over.
  5. Season with salt and pepper.
  6. Add the tomato sauce and pour the red wine. Let the mixture simmer until the wine has evaporated, then add the canned tomatoes. Stir thoroughly and cook the mixture for another 6-8 minutes.
  7. You can use the Bolognese sauce with flat pasta like tagliatelle, pappardelle, fettucine or in the classic Lasagna Bolognese recipe.

How to Make Eggplant Crust Mince Meat Pie

  1. Preheat the oven to 360 degrees F/180 degrees C.
  2. Remove the top of the eggplants.
  3. Make a superficial cut on the length of the eggplants.
  4. Microwave them for 5 minutes.
  5. Dice the onion and put it in a heated cast-iron skillet with some oil.
  6. Add the diced carrot, salt, and pepper.
  7. Cook the veggies until they become softer.
  8. Peel the microwaved eggplants in strips. Keep the strips for later.
  9. Chop the eggplant flesh in little pieces.
  10. Put the minced pork in a large bowl, add the cooked veggies and chopped eggplants.
  11. Mix everything together with an egg and Worcestershire sauce.
  12. Take the eggplant peels and coat an oven tray with them.
  13. Add the mince mix on the eggplant peel bed.
  14. Fold the peels so that they cover the mince mix.
  15. Cook in the oven for 20 minutes.
