If you’re in for something new for tonight’s dinner, you can let pork aside, and buy a thick cut of lamb shoulder. You can cook it in lots of ways, but try this recipe, that has lots of surprising flavors in store for you. We’ve mixed lamb with dried fruit and we’ve cooked it on the stove in a rich and savory sauce.

Ingredients Needed for Braised Lamb with Dried Fruit

12 ounces of lamb shoulder, thick dices
¼ cup vegetable oil
salt
pepper
2 fresh thyme sprigs
3 garlic cloves, sliced
½ cup dried cherry
½ cup dried apricot
1 cup red wine
2 cups of beef stock

How to Cook Braised Lamb with Dried Fruit

  1. Heat the oil in a skillet over medium-high heat. Add the diced lamb and cook it until browned on all sides, while stirring often.
Season it with salt and pepper, thyme, and garlic. Cook for around 5 minutes.
  2. Add the dried cherries, apricots, and the red wine. Bring to a boil and reduce the heat. Cook until the wine reduces by half.
  3. Pour the beef stock, and simmer for around 30 minutes, on low heat, until the meat is tender, and the sauce is thick and glossy.
  4. You can serve it with a nice side of mashed potatoes!
