1 tablespoon vegetable oil
1 zucchini, shredded
6 ounces broccoli, minced
3 eggs
2 tablespoons Cheddar, grated
1 tablespoon flour
1 teaspoon oregano

How to Make Baked Zucchini and Broccoli Fritters

  1. Heat the oil in a pan over low heat, then add the zucchini and broccoli.
  2. Cook and stir for 2-3 minutes. Set aside.
  3. Add the eggs to a bowl and whisk them using the hand mixer.
  4. Keep adding the Cheddar, flour, and oregano. Mix more.
  5. Add the zucchini and broccoli mixture. Mix until even.
  6. Line a roomy baking dish with parchment paper and pour the mixture into it.
  7. Bake for 20 minutes at 400ºF/200ºC.
  8. Serve sliced, garnished with more grated Cheddar and fresh chopped parsley.

  1. Heat the olive oil in a pan over medium-high heat and add the bacon.
  2. Cook and stir until fat is rendered.
  3. Add the onion and turn the heat to medium-low.
  4. Cook and stir until tender. Stir in the garlic.
