2 pineapples
10 ounces cherry tomatoes, finely sliced
2 chilis, finely sliced
2 red onions, minced
2 tablespoons, olive oil
2 teaspoons balsamic vinegar
2 teaspoons sesame seeds
2 tablespoons parsley, chopped
1 tablespoon lime juice
salt
pepper
8 chicken thighs, 3-ounce each
1 tablespoon agave syrup
2 teaspoons soy sauce
1 teaspoon ginger powder

How to Make Chicken Thighs With Hot Pineapple Salad

  1. Peel the pineapple and slice it. Set aside 4-5 slices and dice the rest.
  2. Add the diced pineapple to a bowl together with the cherry tomatoes, chili, and red onion.
  3. Keep adding 1 tablespoon of olive oil, the balsamic vinegar, sesame seeds, and parsley.
  4. Drizzle with lime juice, season with salt and pepper, then mix until even. Set aside.
  5. Add the thighs to a bowl and pour over them the agave syrup and soy sauce.
  6. Keep adding the ginger powder and salt to taste, then add the remaining olive oil.
  7. Mix to entirely coat the chicken thighs with the mixture.
  8. Seal the bowl with plastic foil and marinate for 1 hour.
  9. Transfer the marinated chicken thighs to a roomy baking dish and top with the slices of pineapple.
  10. Bake for 1 hour at 380⁰F/190⁰C.
  11. Serve the baked thighs with salad.

  1. Cut the pork belly in half and score it. Drizzle with olive oil, season with salt and pepper and rub.
  2. Heat a pan over high heat, add the meat and fry it on both sides for 6 minutes.
  3. Add some of the red onions and apples to a baking dish. Season with thyme. Place the two pieces of seared pork belly on top.
  4. Add the remaining onion and apple wedges and the garlic. Pour the vegetable stock and apple cider, then season with more thyme.
  5. Cover with the lid and bake for 2 hours at 340⁰F/170⁰C.
  6. Serve the meat sliced and garnished with fresh tarragon.

1 teaspoon cumin seeds
1 teaspoon coriander seeds
2 tablespoons olive oil
1 onion, sliced
2 carrots, chopped
½ medium celery root, diced

2 large potatoes, cubed
10 ounces chicken breast, chopped

How to Make Apple and Red Cabbage Chicken Soup

  1. Heat the pan over low heat and add the cumin and coriander seeds. Sautee them for 1 minute or so.
  2. Transfer to a grinding mortar and crush them. Set aside.
  3. Heat the olive oil in a pot over low heat. Add the onion and carrots and stir them in. Cook and stir for a minute or so.
  4. Add the celery root and stir it in.
  5. Add the garlic and the cumin mixture. Cook and stir for 8 minutes.
  6. Add the vegetable stock, potatoes, chicken breast, and red cabbage. Stir in and boil for up to 15 minutes.
  7. Season with salt and pepper, add the apples and dill. Stir in and remove from heat.

3 ounces of cornmeal
6 ounces of cold butter
8 tablespoons of cold water
3 onions, diced

½ teaspoon cayenne pepper
1 teaspoon dried rosemary
1 ¼ cups of apple cider
3 ounces of Swiss cheese, grated
1 whisked egg

How to Make Apple-Filled Galette

  1. Add the flour and cornmeal to a bowl and mix them shortly.
  2. Add the cold butter and mix until you have a dough using your hands. Gradually add the cold water in the process. Also, add 1-2 teaspoons of flour.
  3. Shape the dough into a ball and wrap it in plastic. Refrigerate overnight.
  4. Add one tablespoon of butter to a pan over low heat and melt it while stirring.
  5. Add the onion, olive oil, and diced apples. Cook and stir for 10 minutes.
  6. Add the thyme, mustard powder, cayenne pepper, rosemary, and apple cider. Cook and stir until reduced.
  7. Dust your work surface with flour and flatten the dough using the rolling pin.
  8. Top the flattened dough with most of the Swiss cheese, add the cooked apple mixture, then top with the remaining cheese. You can garnish the whole thing with some more thyme.
  9. Fold the dough edges over the apple filling so that it forms a 2-inch wide rim.
  10. Coat the rim with whisked egg, then bake for 30 minutes at 360⁰F/180⁰C.

2 tablespoons of vanilla extract
1 teaspoon cinnamon
3 egg yolks
1 cup heavy whipping cream
1 cup sugar
3 ounces of butter
3 egg whites
2 ladyfingers, crumbled
2 tablespoons of cognac

How to Make Apple Souffle

  1. Add the wedged apples to a baking dish and sprinkle them with the brown sugar.
  2. Drizzle them with 1 tablespoon of vanilla extract and sprinkle with cinnamon. Bake for 20 minutes at 360⁰F/180⁰C.
  3. Transfer to a blender and mix until smooth. Add the yolks and blend some more. Set aside.
  4. Add the whipping cream to a pan over low heat. Add the remaining vanilla extract and 3/4 cup of sugar.
  5. Cook and occasionally stir until the sugar melts.
  6. Add the butter. Cook and stir until it melts. Set aside.
  7. Add the egg whites to a bowl. Mix them until you have a firm cream using the hand mixer. Gradually add the remaining 1/4 cup of sugar in the process.
  8. Mix in the cooked apple blend using a spatula. Add the melted sugar mixture and mix more.
  9. Coat a small oven-proof cooking pot with butter, sprinkle with some sugar (1 tablespoon) and add the crumbled ladyfingers.
  10. Add the cognac and the creamy mixture and bake for 20 minutes at 370⁰F/190⁰C.
  11. Serve garnished with powdered sugar.
