Apple, Goji and Mango Salad With Hot Citrus Dressing

Make a cinnamon-flavored acidic dressing from lemon, lime, grapefruit, and lime. Make it even livelier and more interesting by adding ginger and paprika.

For the fruit salad:

2 apples, shredded
2 ounces of goji berries
1 large carrot, shredded
½ small celery root, shredded
1 medium mango, diced

For the dressing:

1 tablespoon lemon juice
1 tablespoon lime juice
1 tablespoon grapefruit juice
1 teaspoon lime zest
1 teaspoon paprika powder
1 teaspoon cinnamon
1 teaspoon ginger, shredded
roasted almond flakes for garnishing

How to Cook Apple, Goji and Mango Salad With Hot Citrus Dressing

  1. For the fruit salad:

    Add the apples, goji, carrot, celery, and mango to a bowl. Mix them using a spatula. Set aside.

  2. For the dressing:

    Add the lemon juice, lime juice, grapefruit juice, lime zest, paprika powder, cinnamon, and ginger to a smaller bowl. Mix them using a teaspoon.

  3. Dress the salad and mix. Serve garnished with roasted almond flakes.
