Ingredients Needed for Cheesy Triangles

1 tablespoon olive oil
5 ounces of baby spinach
½ cup low fat cottage cheese
1 spring onion, chopped
1 red chili, sliced
1 teaspoon chili flakes
salt
pepper
1 tablespoon lemon juice
½ cup parmesan, grated
¼ cup feta cheese, crumbled
2 egg whites
salt
1 tablespoon olive oil
2 phyllo sheet

How to Make Cheesy Triangles

  1. Heat the olive oil in a skillet over low heat and add the baby spinach. Cook and stir until it softens.
  2. Add the cooked spinach, cottage cheese, spring onion, red chili, chili flakes, lemon juice, parmesan, feta cheese, and egg whites to a bowl. Season with salt and pepper and mix them using two spatulas. Set aside.
  3. Add the egg whites and olive oil to a small bowl. Season with salt and mix them. Set aside.
  4. Assemble the triangles:

    Cut the phyllo sheets into 3 long strips each. Distribute the cheese mixture to them and wrap them to form triangles.

  5. Place the triangles on a parchment paper-lined baking tray and cover them with egg white mixture using a kitchen brush.
  6. Bake for 20 minutes at 340⁰F/170⁰C.

1 large apple

How to Make Apple and Caramel Cookies

  1. Add the butter in a large bowl and start mixing it while adding the brown sugar.
  2. Keep mixing and add the egg, apple juice, and baking powder.
  3. Slowly add the flour and mix until you obtain a smooth mixture.
  4. Peel the apple and shred it.
  5. Mix the apple as well, combining it with the mixture.
  6. Refrigerate for the next hour.
  7. Line a baking tray with parchment paper. Grab the mixture with a scoop and lay the scoops into the tray a short distance from one another.
  8. Slide the tray into the oven for the next 15 minutes at 350 degrees F/175 degrees C.
  9. Take the biscuits out of the oven and serve them with some caramel topping on top!

1 ounce goat cheese, crumbled
3 ounces of arugula

How to Make Butternut Squash and Arugula Pasta

  1. Preheat the oven to 360 degrees F/180 degrees C.
  2. Line a baking sheet with parchment paper.
  3. Add the diced squash over it. Slide the tray into the oven for the next 25 minutes.
  4. Next, heat a saucepan over medium heat, and fill it halfway with water. Add a pinch of salt and the whole wheat penne.
  5. Cook them according to the instructions on the package.
  6. Drain the pasta and add them to a large bowl.
  7. Add the goat cheese over the pasta, some butternut squash, arugula, and pine nuts. Give it a good stir.
