1 large cucumber
1 cup greek yogurt
2 tablespoons of fresh dill , chopped
2 teaspoons of red wine vinegar
1 tablespoon olive oil
2 teaspoons of salt
2 garlic cloves , crushed
2 tablespoons of lemon juice
olive oil for garnishing
mint leaves for garnishing

Quick and easy to prepare, this tzatziki is healthy and refreshing. It's just the right amount of salty with just a tad of tanginess from the red wine vinegar and lemon juice.




Place the cucumber on the work surface and cut off its ends, then peel it. Cut it in half, then longitudinally halve both halves of the cucumber.


Scrape the seeds out using a teaspoon. Grate the 4 pieces of cucumber, add them to a strainer, and press the liquid out using a teaspoon.


Transfer the grated cucumber to a bowl. Add the Greek yogurt, dill, red wine vinegar, olive oil, garlic, and lemon juice too. Season with the salt and some pepper. Mix all until even.


Serve garnished with olive oil and mint leaves.

Well, I love to eat! I guess I always did. Tasty foods, traditional foods, fast-foods, healthy foods and, again, not so healthy ones. You name it. However, in time I kind of built on this habit and, slowly but surely, I began to turn toward the Mediterranean cuisine and, occasionally, even the Mediterranean diet. I am a curious and inquisitive person. So, pretty soon, I started trying to recreate what I’ve tasted or seen. At first, this proved to be hard work for my better half, as she supervised my new experiments. But lately, results really started to show, so wish me luck!
