Sweet Potato Tots

For those of you who stick to healthy diets, we have a very special treat in line. Tater tots are one of America's favorite snacks, but they're not exactly on the healthy side. So, we've tweaked the recipe a bit and came up with a different approach. We've made the tater tots with sweet potato as the main ingredient, and we've roasted them into the oven instead of frying them.

Ingredients

3 sweet potatoes
2 garlic cloves
1 onion, chopped
½ cup breadcrumbs
1 egg
salt
pepper
1 teaspoon coriander powder
¼ cup cheddar, shredded
2 ounces of baby spinach

Preheat the oven to 360 degrees F/180 degrees C.

Line a baking sheet with parchment paper and lay the sweet potatoes over it. Pinch them with a fork.

Slide the tray into the oven for the next 45 minutes.

Cut the potatoes when ready and scoop the potatoes.

Add them in a blender along with breadcrumbs, egg, spinach, and Cheddar.

Season with salt, pepper, and thyme.

Blend everything until smooth.

Preheat the oven to 360 degrees F/180 degrees C.

Shape the mixture into patties.

Line a baking tray with parchment paper and lay the patties on it. Slide it into the oven for the next 30 minutes.

Serve the tots with your favorite dip!

I guess I’ve always had a passion for cooking ever since I was a kid when I was mom’s little helper in the kitchen.
