4 ounces of baby spinach, coarsely sliced
1 tablespoon extra virgin olive oil
2 garlic cloves, minced
2 ounces of feta cheese, crumbled
3 medium tomatoes
- Add the baby spinach to a bowl.
- Add the olive oil, garlic, pepper, and feta cheese. Stir to combine.
- Cut the tomato tops. Scoop out the inside and discard it. Drain the hollowed tomatoes.
- Spoon feta-spinach mixture into each tomato.
