If you’re the kind of person that enjoys scrambled eggs in the morning, for sure you will enjoy a slight twist on the classic recipe! So, if you don’t feel lazy today, you can first cook some turkey breast, flavored with soy sauce, a few spices and veggies. Add the meat and veggies on some crispy bread, and top them with your favorite velvety-textured scrambled eggs. Boy we wish all mornings would start this way!

Ingredients Needed for Scrambled Eggs and Turkey Sandwich

2 tablespoons of vegetable oil
8 ounces of turkey breast, sliced
salt
pepper
1 teaspoon oregano
1 tablespoon soy sauce
1 onion, chopped
¼ red bell pepper, chopped
1 ounce celery, chopped
parsley
4 eggs
2 pita breads

How to Make Scrambled Eggs and Turkey Sandwich

  1. Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add the turkey breast and season it with salt, pepper, and oregano. After 3 minutes, add the soy sauce, and continue cooking the meat for another 10 minutes, stirring occasionally. Add the chopped onion, bell pepper, celery, and parsley and cook them for 5 more minutes.
  2. Crack the eggs in a large bowl, season them with salt and pepper and whisk them.
  3. Add the remaining oil in a skillet over medium heat. Add the whisked eggs. Slowly mix with a spatula until the eggs look slightly underdone. Turn off the heat. They will continue to cook after you remove them from the stove.
  4. For serving, you toast or grill a the pita bread, and top it with cooked turkey and scrambled eggs!
