Ingredients Needed for Scrambled Eggs and Turkey Sandwich
2 tablespoons of vegetable oil
8 ounces of turkey breast, sliced

1 teaspoon oregano
1 tablespoon soy sauce
1 onion, chopped
¼ red bell pepper, chopped
1 ounce celery, chopped

How to Make Scrambled Eggs and Turkey Sandwich
- Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add the turkey breast and season it with salt, pepper, and oregano. After 3 minutes, add the soy sauce, and continue cooking the meat for another 10 minutes, stirring occasionally. Add the chopped onion, bell pepper, celery, and parsley and cook them for 5 more minutes.
- Crack the eggs in a large bowl, season them with salt and pepper and whisk them.
- Add the remaining oil in a skillet over medium heat. Add the whisked eggs. Slowly mix with a spatula until the eggs look slightly underdone. Turn off the heat. They will continue to cook after you remove them from the stove.
- For serving, you toast or grill a the pita bread, and top it with cooked turkey and scrambled eggs!
