Veggie fan? Then you probably know that eggplants are just about perfect for a quick summer snack. Slice an eggplant and top it with shredded cheese, olives, and spicy salami. Bake it for a few minutes. The result is delicious, but you have to see for yourself!

Ingredients Needed for Eggplant and Salami Snack

1 eggplant
½ cup mozzarella, shredded
1 ounce olive, sliced
9 salamis slices

How to Cook Eggplant and Salami Snack

  1. Preheat the oven to 350 degrees F/175 degrees C.
  2. Slice the eggplant.
  3. Line a baking tray with parchment paper.
  4. Place on it the eggplant slices.
  5. Top each eggplant slice with mozzarella, olives, and salami.
  6. Cook for 25 minutes.
  7. Enjoy!
