Let’s mix two goodies into one. The sandwich and the homemade fish fingers brought together into one delicious and mouth-watering snack. Coat the cod fingers with flour, egg wash, and fajita seasoning mixed with breadcrumbs, fry them, and stack your buns with raw veggies, mayo, and pickled cucumber.

Ingredients Needed for Crispy Cod Sandwiches

¼ cup flour
salt
½ cup breadcrumbs
1 tablespoon fajita seasoning
2 eggs
2 tablespoons of milk
10 ounces of cod fillet
vegetable oil
4 burger buns, halved
4 cherry tomatoes, sliced
1 lemon, wedged
8 teaspoons of mayonnaise
1 pickled cucumber, sliced
2 ounces of salad mix

How to Make Crispy Cod Sandwiches

  1. Preparing the egg wash:
    Add the eggs and the milk to a smaller bowl and whisk them together.
  2. Add the flour to a smaller tray and mix it with some salt. Use another tray for the breadcrumbs, but mix these with the fajita seasoning.
  3. Heat some vegetable oil in a skillet over medium heat, coat the cod fillets with flour mix, egg wash, and fajita breadcrumbs, and fry them on both sides until golden brown.
  4. Spread two teaspoons mayonnaise on the lower half of each burger bun, add some salad, cherry tomato slices, and one cod fish finger. Top it with each bun’s upper half. Serve them with lemon wedges and pickled cucumber slices.
