8 ounces of vanilla cream cookies
¼ cup melted butter
1 ½ cups of cream cheese
⅔ cup butter
½ cup powdered sugar
2 cups of whipped cream
12 ounces of vanilla pudding
⅓ cup white chocolate, shredded (for garnishing)

How to Make No-Bake Vanilla Pudding Cheesecake

  1. Add the cookies to a blender. Crush them until smooth. Add the melted butter and blend a little more.
  2. Line an 11 x 7 x 2 inches (28 x 18 x 5 cm) baking dish with parchment paper. Layer the crushed cookie mixture into the dish and spread it evenly. Refrigerate for 60 minutes.
  3. Add the cream cheese, butter, and powdered sugar to a bowl. Mix until smooth using a hand mixer. Add 1 cup of whipped cream and mix it in.
  4. Layer it over the refrigerated crushed cookie mixture. Add the vanilla pudding and then the remaining cup of whipped cream. Spread each evenly.
  5. Garnish with shredded white chocolate, then refrigerate for another 60 minutes.

For the icing:

1 ½ cups of powdered sugar
2 ounces of cream cheese
2 tablespoons of melted butter
2 tablespoons of maple syrup
salt
½ cup sprinkles for garnishing

How to Make Gingerbread With Maple Icing

For the dough:
  1. Add the flour, sugar, baking powder, and gingerbread spice mix to the dough mixer bowl. Season with salt and mix until even.
  2. Add the butter, milk, vanilla extract, and egg. Mix more until you have a dough.
  3. Distribute the dough into the cavities of a gingerbread pan. Depending on how big your pan is, you may need to cook them in 3 to 5 batches. In the end, we’ve ended up with 30 gingerbread cookies.
  4. Leave place inside the pan cavities for the dough to grow, so you should fill them just about halfway. Bake for 15 minutes at 360⁰F/180⁰C.
For the icing:
  1. Add the powdered sugar, cream cheese, melted butter, and maple syrup to a bowl. Season with salt and mix until even using a tablespoon.
  2. Top the gingerbread cookies with maple icing and garnish with sprinkles.

⅔ cup powdered sugar

How to Make Almond Butter

  1. Preheat the oven to 360°F/180°C.
  2. Line a baking tray with parchment paper. Spread the almonds on it on an even layer, then move the tray to the oven and roast for 10 minutes. Remove and allow the almonds to cool.
  3. Add the roasted almonds to your food processor and pulse for 10-12 mins, stopping often to scrape the sides down.
  4. Add the honey and pulse again to combine the ingredients.
