Sweet Corn and Shrimp With Peas

Cooking with shrimp is always a quick and easy way to get some healthy and tasty seafood on the table. Toss into the skillet vegetable goodies like fennel and celery. Make it slightly hot by adding some chili. Also, use sweet corn so that its mild sweetness combines with that of the peas. And you want to mash the latter to release their whole flavor.

Ingredients Needed for Sweet Corn and Shrimp With Peas

    For the shrimp mixture:

    2 teaspoons of vegetable oil
    1 small onion, diced
    0.5 medium fennel, chopped
    1 celery stick, chopped
    1 fresh chili, chopped
    10 ounces of shrimp
    1 teaspoon soy sauce
    salt
    pepper
    3 ounces of sweet corn
    1 tablespoon fresh dill, chopped

    For the peas:

    1 cup peas
    salt
    pepper
    2 teaspoons of lime juice

How to Make Sweet Corn and Shrimp With Peas

  1. For the shrimp mixture:

    Heat the oil in a skillet over low heat. Add the onion, fennel, celery, and chili. Stir for up to 1 minute.

  2. Add the shrimp, soy sauce, and season with salt and pepper. Cook and stir for up to 2 minutes.
  3. Add the sweet corn and dill. Cook and stir for 2 more minutes. Remove from heat.
  4. For the peas:

    Fill a medium-sized cooking pot with water and bring to a boil. Add the peas and boil 5 minutes.

  5. Transfer the peas to a bowl, season with salt and pepper, and add the lemon juice. Mash them using a hand masher.
