1 cup of coconut milk
1/3 cup xylitol
1 tablespoon vanilla extract
1 teaspoon baking soda
1/3 cup coconut flour
- Add the eggs, coconut milk, xylitol, vanilla extract, and baking soda to a bowl. Mix them together using the hand mixer.
- Add the coconut flour and mix until smooth.
- Transfer the mixture to a 12-cup muffin pan (or 2 such pans of 6 cups each).
- Bake for 25 minutes at 350⁰F/175⁰C.
