Ingredients Needed for Roast Lamb Shoulder With Garlic Potatoes
3 garlic cloves
4 small potatoes, halved
1 red onion chopped

1 pound lamb shoulder
½ cup fresh herbs
1 tablespoon lime juice

How to Make Roast Lamb Shoulder With Garlic Potatoes
- Press the garlic cloves with the flat side of a broad knife and then peel them. Add the garlic clove, potatoes, red onion, vegetable oil, and fresh herbs to a parchment paper-lined baking tray. Season with salt and pepper and set aside.
- Heat the vegetable oil in a skillet over medium-high heat and add the lamb shoulder. Fry it both sides until golden brown.
- Place the fried lamb shoulder on the baking tray on top of the other ingredients, drizzle the drippings over the meat, and place the herbs on top of it all.
- Drizzle the lime juice, season with salt and pepper, cover with aluminum foil, then roast for 60 minutes at 340⁰F/170⁰C.
