Polenta Surprise

This is for all of you, polenta lovers! Take one square of polenta, add shredded mozzarella and fried bacon and bake everything for a few minutes. Serve hot!

Ingredients Needed for Polenta Surprise

2 ounces of bacon
3 cherry tomatoes
5 ounces of polenta
¼ cup shredded mozzarella
¼ cup grated feta cheese

How to Make Polenta Surprise

  1. Preheat the oven to 350 degrees F/180 degrees C.
  2. Fry the bacon in a skillet, without using vegetable oil.
  3. Add the cherry tomatoes into the skillet and cook them for about 2 minutes.
  4. To make polenta, add water in a saucepan and sprinkle some salt. Bring it to boil. Add, gradually, corn flour. Whisk and, when it gets thicker, mix it with a spoon.
  5. Put the polenta in a square shape.
  6. Place the squared polenta on a baking tray in which you put a parchment paper.
  7. Add mozzarella on polenta.
  8. Add fried bacon.
  9. Add the feta cheese.
  10. Top it with the cherry tomatoes.
  11. Bake it for 15 minutes.
