We made these great-looking brownies with Halloween in mind. We flavored the cocoa base with vanilla and topped it with a sweet cream cheese mixture. We chose to color this last one with the hallmark color of Halloween and even created a sort of abstract pattern by blending it with some cocoa mixture. Try it, it’s super easy!

Ingredients

For the cocoa mixture:

¾ cup sugar
¼ cup cocoa powder
½ cup flour
salt
1 teaspoon baking powder
2 eggs
¼ cup vegetable oil
1 teaspoon vanilla extract

For the topping:

1 cup cream cheese
1 egg
¼ cup sugar
1 teaspoon orange food coloring

Steps

  1. For the cocoa mixture:

Add the sugar, cocoa powder, flour, and baking powder to a bowl. Season with salt and whisk until even. Set aside.

  2. Add the eggs, vegetable oil, and vanilla extract to a bowl. Mix until even using a hand mixer.
  3. Add the egg mixer to the cocoa mixture bowl. Mix until even using a spatula.
  4. Line a smaller Jelly Roll pan with parchment paper. Set aside to a small bowl 2 – 3 tablespoons from the egg and cocoa mixture, then layer the rest into the pan. Set aside.
  5. For the topping:

Add the cream cheese, egg, and sugar to a bowl. Mix until even using a hand mixer. Add the food coloring and mix it in.

  6. Layer this mixture on top of the cocoa mixture layer. Add the tablespoons of cocoa mixture set aside in step 4. Artfully mix them into the topping. Bake for 30 minutes at 350⁰F/175⁰C.
