If you have any leftover cooked rice, use it for this fried pork rice dish. We made it with pecans and lots of different flavors like chili, turmeric, and soy sauce. If you don’t have leftover rice, don’t let that stop you! You can cook some especially for this. The rest of the recipe stays just as great.

Ingredients Needed for Fried Pork Rice

10 ounces of pork neck, cubed
4 tablespoons of vegetable oil
salt
½ eggplant, cubed
1 handful pecan nut
1 teaspoon brown sugar
1 teaspoon butter
1 ½ cups of cooked rice
1 teaspoon soy sauce
½ teaspoon chili flakes
½ teaspoon turmeric
1 cup canned peas
1 chili pepper, slices

How to Make Fried Pork Rice

  1. Heat the vegetable oil in a wok.
  2. Add the pork neck cubes.
  3. Add salt and stir. Cook until the pork pieces turn golden-brown.
  4. Add the eggplant cubes and stir.
  5. Add the pecans, brown sugar, and butter. Stir and cook further.
  6. Add the cooked rice, soy sauce, chili flakes, turmeric, and canned peas.
  7. Stir and cook for a few more minutes. Make sure the meat is cooked through.
  8. Serve it with some red chili slices.
