1 pound cucumber, peeled and lengthwise quartered
2 teaspoons lemon juice
1 avocado

1 cup yogurt
½ cucumber, peeled and diced (for garnishing)
2 cherry tomatoes, diced (for garnishing)

How to Make Cucumber Cream Soup
- Add the cucumber and lemon juice to the blender. Blend until smooth.
- Add the avocado and season with salt. Blend more.
- Add the yogurt and do the same.
- Garnish with diced cucumber, cherry tomatoes, and basil leaves. Serve drizzled with olive oil.
