Ingredients Needed for Chickpea, Tomato, and Feta Salad
1 tablespoon vegetable oil
1 teaspoon coriander seeds
5 ounces of chickpea
1 teaspoon cumin powder
3 ounces of baby spinach
5 ounces of cherry tomato
3 ounces of sun-dried tomato
1 small cucumber, chopped
3 ounces of feta cheese
1 tablespoon olive oil
2 teaspoons of lemon juice
1 teaspoon fresh parsley
How to Make Chickpea, Tomato, and Feta Salad
- Heat the vegetable oil in a skillet over low heat, add the coriander seeds and chickpeas. Cook and stir for 2-3 minutes. Add the cumin powder, stir a little, then transfer into a bowl.
- Add the baby spinach, cherry, and sun-dried tomatoes, cucumber, feta cheese. Mix them all using two spatulas.
- Drizzle the olive oil and lemon juice, garnish with some fresh parsley, mix some more and serve.
