Ingredients Needed for Chicken and Quinoa Salad
1 tablespoon vegetable oil
4 ounces of chicken breast, sliced
1 tablespoon red wine vinegar
1 tablespoon olive oil
1 tablespoon lemon juice
1 teaspoon dried oregano
2 ounces of cooked quinoa
4 cherry tomatoes, halved
1 small cucumber, cubed
5 black olives
1 tablespoon feta cheese
How to Make Chicken and Quinoa Salad
- Heat the vegetable oil in a skillet over medium heat.
- Add the chicken breast, some salt, and pepper and cook it on both sides until golden brown. Set aside.
- Add the vinegar, olive oil, lemon juice, dried oregano and some salt to a small bowl. Mix them. Set aside.
- Serve the cooked quinoa with the cooked chicken breast, cherry tomatoes, cucumber, black olives, avocado, and feta. Garnish with fresh dill and drizzle some of our vinegar-lemon juice sauce.
