1 tablespoon vegetable oil
4 ounces of chicken breast , sliced
1 tablespoon red wine vinegar
1 tablespoon olive oil
1 tablespoon lemon juice
1 teaspoon dried oregano
2 ounces of cooked quinoa
4 cherry tomatoes , halved
1 small cucumber , cubed
5 black olives
½ avocado
1 tablespoon feta cheese

This straightforward and very easy to prepare salad is made up with cooked quinoa, fried chicken breast and some raw veggies added to the plate. We’re also bringing into the game an unpretentious sauce made from red wine vinegar, olive oil, lemon juice and oregano.




Heat the vegetable oil in a skillet over medium heat.


Add the chicken breast, some salt, and pepper and cook it on both sides until golden brown. Set aside.


Add the vinegar, olive oil, lemon juice, dried oregano and some salt to a small bowl. Mix them. Set aside.


Serve the cooked quinoa with the cooked chicken breast, cherry tomatoes, cucumber, black olives, avocado, and feta. Garnish with fresh dill and drizzle some of our vinegar-lemon juice sauce.

Well, I love to eat! I guess I always did. Tasty foods, traditional foods, fast-foods, healthy foods and, again, not so healthy ones. You name it. However, in time I kind of built on this habit and, slowly but surely, I began to turn toward the Mediterranean cuisine and, occasionally, even the Mediterranean diet. I am a curious and inquisitive person. So, pretty soon, I started trying to recreate what I’ve tasted or seen. At first, this proved to be hard work for my better half, as she supervised my new experiments. But lately, results really started to show, so wish me luck!
