Bacon and Pea Risotto

You all know we’re probably the biggest bacon fans, and we like to put it right on the main stage in just about any dish imaginable. So, when we were wondering what to add in our risotto recipe, it was clear that the choice was simple. We’ve also added some peas to the recipe, and we flavored it with mint and parmesan.

Ingredients Needed for Bacon and Pea Risotto

4 slices of bacon, chopped
1 ounce butter
1 teaspoon vegetable oil
1 onion, chopped
1 cup risotto rice
½ cup white wine
2 cups of chicken stock
salt
pepper
1 tablespoon mint, chopped
3.5 ounces of peas, frozen
½ cup parmesan, shredded

How to Cook Bacon and Pea Risotto

  1. Heat a skillet over medium heat and add the bacon in it. Cook it until golden and crispy.
  2. Remove the bacon from the skillet, add the butter, and melt it.
  3. Add the vegetable oil and cook the onion until translucent.
  4. Add the risotto rice and stir.
  5. Pour the white wine and gradually add the chicken stock.
  6. Cook for 20-25 minutes, while stirring frequently.
  7. Add the bacon, peas, and mint.
  8. Cover with a lid and simmer for 20 minutes.
