This lovely avocado cake is so easy to make, especially since most of the time it will be baking by itself in the oven. The fatty but healthy mashed avocado is a great replacement for chocolate. If you add it to the base mixture, the result is a deliciously fluffy sweet snack. Upgrade it by adding a lemon-flavored glaze and crumbled pistachios on top.

Ingredients Needed for Avocado Cake

For the avocado mixture:

4 eggs
1 cup sugar
2 large avocados, mashed
1 tablespoon baking powder
1 cup flour

For the glaze:

1 cup icing sugar
3 tablespoons of lemon juice
pistachios, crumbled (for garnishing)

How to Make Avocado Cake

  1. For the avocado mixture:Add the eggs and sugar to the kitchen mixer and whisk. Add the mashed avocado, baking powder, and flour. Mix more until even.
  2. Line an 11-inch loaf pan with parchment paper. Transfer the avocado mixture and bake for 50 minutes at 340⁰F/170⁰C.
  3. For the glaze:Add the icing sugar and lemon juice to a smaller bowl. Mix until smooth using a teaspoon.
  4. Glaze the avocado loaf, then garnish it with crumbled pistachio.
