4 pounds of pork neck
salt
pepper
½ cup sweet red pepper paste
¼ cup olive oil
4 garlic cloves
4 fresh rosemary sprigs

Place the pork neck on the work surface. Season with salt and pepper and rub in.

Completely coat with sweet red pepper paste.

Transfer to a baking pan on aluminum foil. Drizzle with the olive oil. Add the garlic cloves and rosemary sprigs.

Completely wrap with aluminum foil and roast for 2 hours at 400⁰F/200⁰C.
