7 ounces of cooked quinoa
1 tablespoon soy sauce
1 tablespoon coconut flakes
2 tablespoons of raisin
½ red bell pepper, cubed
1 small mango, cubed
1 small red onion, thinly sliced
3 tablespoons of parsley, chopped
1 teaspoon lime zest
1 tablespoon fresh coriander
¼ cup almond (for topping)
How to Make Quinoa and Mango Salad
- Add the cooked quinoa in a large salad bowl.
- Add the soy sauce, coconut flakes, raisins, red bell pepper, mango, and onion.
- Chop the parsley and coriander and add them to the bowl.
