Ingredients Needed for Purple and White Potato Hash
2 purple potatoes
1 red onion
2 egg yolks
1 tablespoon vegetable oil
2 teaspoons of mustard
½ spring onion
How to Cook Purple and White Potato Hash
- Chop all of the potatoes in small dices. Thinly slice the jalapeno, and chop the red onion.
- Heat the vegetable oil in a skillet over high heat. Add the white potatoes and cook them for 6-8 minutes, until slightly golden. Add the purple ones and cook for 10-12 more minutes. About 2 minutes before you finish cooking them, add the jalapeno and red onion. Place the dish in 2 separate serving plates.
- Mix each egg yolk with 1 teaspoon of mustard. Add 1 yolk in each plate. The egg yolk will cook itself thanks to the heat released by the potatoes. Season with a pinch of salt.
- Serve with spring onion on top!
