It may not be an authentic tagine, but it was our inspiration for this simple, yet delicious, recipe down below. It involves savory pork tenderloin, next to lots of veggies, cooked in the oven in a clay baker, to help combine those delicious flavors!

Ingredients Needed for Pork and Veggie Tagine

12 ounces of pork tenderloin
2 celery sticks, chopped
1 spring onion, chopped
4 mushrooms, sliced
2 potatoes, diced
1 zucchini, diced
salt
pepper
1 cup vegetable stock
2 tablespoons of cocoa powder

How to Make Pork and Veggie Tagine

  1. Place the pork in a clay baker.
  2. Add the carrot, celery, spring onion, mushrooms, potatoes, and zucchini.
  3. Season with salt and pepper.
  4. Pour the vegetable stock.
  5. Set the oven to 390°F/200°C.
  6. Cover the clay baker with a lid, and lay it in the oven for the next 50 minutes!
