Risotto is usually made of rice. But you can experiment with other grains and vegetables when cooking risotto! For example, make it out of some shredded mushrooms instead of rice! And to spice things up, add turmeric flavored chicken. And if you’re looking for a side, we can’t think of anything better than a sweet carrot and potato mash!

Ingredients Needed for No Rice Chicken Risotto

10 mushrooms 2 tablespoons of vegetable oil salt pepper 3.5 ounces of chicken breast 1 teaspoon turmeric ¼ cup water 2 carrots, sliced 1 teaspoon saffron salt

How to Make No Rice Chicken Risotto

  1. Slice and mince the mushrooms.
  2. Heat a skillet, add 1 tablespoon of vegetable oil and start cooking them.
  3. Season them with salt and pepper, and cook them for about 1 minute.
  4. Slice and mince the chicken breast.
  5. Heat a skillet, add 1 tablespoon of vegetable oil and start cooking the meat.
  6. Season it with salt and turmeric, and add some water in the skillet. Cook the meat for about 4-5 minutes.
  7. Slice the carrots and potato and add them into a saucepan filled with boiling water.
  8. Boil them for about 15 minutes.
  9. When ready, blend them until smooth, adding a pinch of saffron in the process.
  10. Use cooking rings so your dish can have that round risotto shape.
  11. First add 1 mushroom layer, then the chicken, and top it with mushrooms again.
  12. Remove the cooking ring and it’s ready.
  13. Serve it with potato and carrot mash.
