¼ cup instant cornmeal
½ cup water
1 cup milk
How to Make Microwave Polenta
- Add the instant cornmeal, water, some olive oil, and salt in a bowl. Whisk, then microwave for 2.5 minutes.
- When the time’s up, remove the bowl from the microwave oven, whisk the polenta, and add a quarter of the milk quantity. Microwave for 2.5 more minutes.
- Remove from the oven, add 1/2 cup of milk, whisk, return to microwave for 1.5 more minutes.
- Take it out, stir with a spoon, add the remaining milk, then serve.
