Ingredients Needed for Chicken Stew With Bell Peppers
½ cup flour
4 chicken thighs
vegetable oil for frying
3 bacon
2 onions s sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced
1 cup diced tomato
1 teaspoon curry powder
1 ounce redcurrant
1 cup chicken stock
How to Make Chicken Stew With Bell Peppers
- Heat a skillet and add the vegetable oil. Coat the chicken thighs with flour and start frying them.
- Cook them for about 5-6 minutes per side, or until golden and crispy. When ready, take them out of the pan.
- Heat another skillet and fry the bacon slices until golden and crispy.
- Add the onion in a saucepan and let it cook for about 1 minute, until it begins to look golden. Add the bell pepper slices, diced tomatoes, redcurrant, chicken stock and bring to a boil. Add the cooked chicken and fried bacon. Put a lid on and let it simmer for about 25 minutes.
- Serve warm!
