We do love salmon, but serving it inside pastry crust is something that we just can't get enough of. That is why we invite you to try these salmon pastries with spinach and cheese. We've used ricotta and cream cheese, and to serve the pastries, we've also cooked up a nice and creamy parmesan sauce.

Ingredients Needed for Salmon Pastries With Spinach and Cheese

1 tablespoon vegetable oil
1 red onion, chopped
½ red bell pepper, small dices
2 ounces of baby spinach
salt
pepper
7 ounces of ricotta
7 ounces of cream cheese
2 tablespoons of fresh dill, chopped
1 sheet of puff pastry, thawed
1 pound salmon, 2 fillets
egg wash
sesame seeds

For the parmesan sauce:

1 teaspoon vegetable oil
4 garlic cloves
7 ounces of cream cheese
½ cup parmesan
fresh basil leaves

How to Make Salmon Pastries With Spinach and Cheese

  1. Heat the vegetable oil in a skillet over medium heat.
  2. Add the red pepper, onion, spinach, and give it a good stir. Season with salt, pepper, and cook everything for 2 minutes.
  3. Next, mix the ricotta and cream cheese with a spatula in a large bowl. Season with salt, pepper, add some fresh dill and mix until smooth.
  4. Preheat the oven to 350 degrees F/175 degrees C.
  5. Line a baking sheet with parchment paper and lay the pastry over it.
  6. Divide the pastry into 2 sections. Add the spinach in the middle of each section, and top it with 1 salmon fillet.
  7. Evenly spread cream mixture over the salmon.
  8. Wrap the salmon in pastry. Superficially score it on the surface. Use a brush and spread egg wash over the pastries. Sprinkle some sesame seeds on top.

  10. Slide the tray into the oven for the next 30 minutes.
  11. Heat the vegetable oil in a skillet over medium heat. Add the garlic cloves and the cream cheese.
  12. Give it a good stir until the cheese melts. Add the parmesan and fresh basil leaves. Season the sauce with salt and pepper.
  13. Simmer it on heat for 1-2 minutes until the sauce thickens and becomes smooth.
