Ingredients Needed for Chicken Parmesan With Pepperoni

½ cup breadcrumbs
½ cup parmesan
½ cup flour
2 eggs
1 tablespoon lemon juice
vegetable oil for frying
2 chicken breasts s, boneless, around 5 ounces each
2 tablespoons of tomato sauce
½ cup mozzarella, shredded
4 pepperonis slices

How to Make Chicken Parmesan With Pepperoni

  1. Preheat the oven to 360°F/180°C.
  2. Place the breadcrumbs in a bowl, and mix in salt, pepper, and parmesan.
  3. Place the flour in a second bowl.
  4. Crack the eggs, whisk them, add a splash of lemon juice and add them in a third bowl.
  5. Coat the chicken breast with flour, whisked egg, and breadcrumbs.
  6. Heat the oil in a skillet over medium-high heat.
  7. Cook the schnitzels for 5-6 minutes, until golden and crispy.
  8. Preheat the oven to 360°F/180°C.
  9. Lay the schnitzels in a baking tray. Spread 1 tablespoon of tomato sauce over each of them and top with shredded mozzarella and pepperoni.
  10. Bake the schnitzels for 7 minutes.
