“Crepe” is the French term for pancake. But it’s thinner and larger than the American pancake. The batter is easy to make! Then, you fry the crepes and you can choose a sweet or salty filling. For brunch, we recommend you make them with fried bacon and mozzarella.

Ingredients Needed for Bacon and Mozzarella Crepes

1 cup flour
2 eggs
salt
2 tablespoons of vegetable oil
⅔ cup milk
6 ounces of bacon
1 cup shredded mozzarella

How to Make Bacon and Mozzarella Crepes

  1. Put the flour in a bowl.
  2. Add the eggs, sprinkle some salt, add one tablespoon of vegetable oil and the milk.
  3. Make a batter using a mixer.
  4. In a skillet heat the remaining vegetable oil.
  5. Chop the bacon and fry it.
  6. Grease with a drop of vegetable oil another skillet.
  7. Put on the bottom some crispy bacon.
  8. With a ladle, pour some batter over the bacon.
  9. Cook it about 30 seconds or until it becomes golden on the bottom. Then, flip it and cook for 30 more seconds.
  10. With this quantity of batter, you’ll make about 6 pancakes. Take care to divide the bacon in equal quantities!
  11. Fill each pancake with shredded mozzarella, then fold it.
  12. Bake them in the oven for about 2-3 minutes to 350 degrees F/180 degrees C.
