Ingredients Needed for Deep-Fried Corn Balls

¾ cup flour
½ cup cornmeal
1 large onion, shredded
1 teaspoon sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 cup buttermilk
2 eggs, whisked
1 jalapeno, thinly sliced
vegetable oil (for frying)

How to Make Deep-Fried Corn Balls

  1. Add the flour and cornmeal in a medium-sized bowl. Shred the onion and remove the excess water by pressing it with a paper towel.
  2. Add the onion, sugar, baking powder, baking soda, buttermilk, whisked egg, jalapeno, and mix with a fork to combine the ingredients.
  3. Cover the bowl with plastic foil and refrigerate for 30 minutes.
  4. Rub your hands with oil and shape the mixture into 2 inches (5 cm) thick balls. Continue until you’ve used the mixture.
  5. Heat the vegetable oil in a wok over high heat. Add the balls and fry them until golden. Remove them from the oil with a slotted spatula.
  6. You can serve the corn balls with your favorite dips!

3 red bell peppers
1 teaspoon vegetable oil

¼ cup breadcrumbs
2 tablespoons of water
salt
pepper
1 teaspoon cumin seeds
1 teaspoon chili powder
2 ounces of walnuts
1 tablespoon olive oil

How to Make Muhammara

  1. Preheat the oven to 365 degrees F/180 degrees C.
  2. Line a baking dish with parchment paper.
  3. Lay the bell peppers and roast them for the next 25 minutes. Peel them when ready and remove the seeds.
  4. Heat the vegetable oil in a skillet over medium heat. Add the onion and cook it until golden.
  5. Add the breadcrumbs in a blender along with a bit of water, cooked onion, and roasted bell peppers.
  6. Season with salt, pepper, cumin seeds, and paprika. Add the walnuts and a small drizzle of olive oil.
  7. Blend until smooth.

2 tortilla wraps
1 tablespoon olive oil
1 teaspoon cumin seeds
1 teaspoon paprika
1 teaspoon turmeric
¼ cup tahini
1 tablespoon olive oil
salt
2 tablespoons of water

How to Make Spicy Tortilla With Tahini Sauce

  1. Preheat the oven to 320 degrees F/160 degrees C.
  2. Lay the tortillas one on top of the other and cut them into 8 small triangles.
  3. Line a baking tray with parchment paper and lay the tortillas over it. Drizzle them with olive oil and season with cumin seeds, paprika, and turmeric.
  4. Slide the tray into the oven for the next 10-12 minutes.
  5. Pour the tahini in a small bowl and mix it with lemon juice, olive oil, and salt. Start whisking and slowly pour the water.
  6. Take the tortilla out of the oven and serve it with the tahini sauce.
