3 eggs

1 spring onion, chopped
3 ounces of smoked trout
3 ounces of gruyère, sliced
How to Cook Smoked Trout and Gruyere Omelet
- Add the eggs in a large bowl along with a pinch of salt and pepper. Whisk until smooth.
- Heat a skillet over medium heat, add the butter and melt it. Add the chopped onion and cook it for 1 minute.
- Pour the whisked eggs and when they start cooking evenly spread the smoked trout and gruyere.
- Put a lid on, reduce the heat, and cook for 4-5 minutes. Sprinkle the chives before serving.
