Cook the pork for 6 hours over high temperature to make the meat fork tender, and with the help of a fork, your pulled pork is ready in no time. Serve it with a crispy side of onion and bell pepper rings.

Ingredients Needed for Slow Cooker Pulled Pork With Veggie Rings

For the pulled pork:

1 teaspoon barbecue sauce
1 tablespoon brown sugar
1 teaspoon chili powder
1 cup beer
1 onion, small cubes
1 teaspoon white wine vinegar
1 teaspoon chipotle powder
1 pound pork loin

For the fried veggies:

2 egg whites
1 large onion, sliced into rings
1 large red bell pepper, vertically sliced
1 cup flour
1 teaspoon cumin powder
1 teaspoon chili powder
vegetable oil for frying

How to Make Slow Cooker Pulled Pork With Veggie Rings

  1. Add the barbecue sauce, brown sugar, and chili powder in the slow cooker.
  2. Pour the beer, season with salt, add the onion, white wine vinegar, chipotle powder, and finally, the pork loin. Cover it with a lid.
  3. Set the slow cooker at “High” temperature and cook the pork for the next 6 hours.
  4. Take out the pork and shred it using 2 forks. Leave the pork aside.
  5. Whisk the egg whites in a large bowl and use it to coat the onion and red bell pepper.
  6. Prepare the batter. Add the flour to a large bowl. Season with salt, pepper, cumin powder, and chili powder. Mix well.
  7. Coat the onion and bell pepper rings using the mixture.
  8. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  9. Add the veggie rings and fry them until golden and crispy.
  10. Serve them with the pulled pork!
