Ingredients Needed for Slow Cooker Pulled Pork With Veggie Rings
For the pulled pork:
1 teaspoon barbecue sauce
1 tablespoon brown sugar
1 teaspoon chili powder
1 cup beer
salt
1 onion, small cubes
1 teaspoon white wine vinegar
1 teaspoon chipotle powder
1 pound pork loin
For the fried veggies:
2 egg whites
1 large onion, sliced into rings
1 large red bell pepper, vertically sliced
1 cup flour
pepper
1 teaspoon cumin powder
1 teaspoon chili powder
vegetable oil for frying
How to Make Slow Cooker Pulled Pork With Veggie Rings
- Add the barbecue sauce, brown sugar, and chili powder in the slow cooker.
- Pour the beer, season with salt, add the onion, white wine vinegar, chipotle powder, and finally, the pork loin. Cover it with a lid.
- Set the slow cooker at “High” temperature and cook the pork for the next 6 hours.
- Take out the pork and shred it using 2 forks. Leave the pork aside.
- Whisk the egg whites in a large bowl and use it to coat the onion and red bell pepper.
- Prepare the batter. Add the flour to a large bowl. Season with salt, pepper, cumin powder, and chili powder. Mix well.
- Coat the onion and bell pepper rings using the mixture.
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the veggie rings and fry them until golden and crispy.
- Serve them with the pulled pork!
