Slow Cooker Pulled Pork with Veggie Rings

Ingredients

For the pulled pork:
1 teaspoon barbecue sauce
1 tablespoon brown sugar
1 teaspoon chili powder
1 cup beer
salt
1 onion, small cubes
1 teaspoon white wine vinegar
1 teaspoon chipotle powder
1 pound pork loin
For the fried veggies:
2 egg whites
1 large onion, sliced into rings
1 large red bell pepper, vertically sliced
1 cup flour
pepper
1 teaspoon cumin powder
1 teaspoon chili powder
vegetable oil for frying

Add the barbecue sauce, brown sugar, and chili powder in the slow cooker.

Pour the beer, season with salt, add the onion, white wine vinegar, chipotle powder, and finally, the pork loin. Cover it with a lid.

Set the slow cooker at "High" temperature and cook the pork for the next 6 hours.

Take out the pork and shred it using 2 forks. Leave the pork aside.

Whisk the egg whites in a large bowl and use it to coat the onion and red bell pepper.

Prepare the batter. Add the flour to a large bowl. Season with salt, pepper, cumin powder, and chili powder. Mix well.
