Salmon Salad With Croutons

Just another salad? Not today! Let’s oven-bake some salmon, first. Second, fry some bacon, really crispy. Then let’s make a Greek yogurt, mayonnaise, vinegar, honey and olive oil dressing. We’ll combine the salmon and bacon with veggies and croutons and finish by adding the white dressing on top.
Ingredients Needed for Salmon Salad With Croutons
Cooking the salmon:
6 ounces of salmon fillet
1 tablespoon olive oil
salt
pepper
For the crispy bacon:
3 bacon slices
For the dressing:
1 tablespoon greek yogurt
1 tablespoon mayonnaise
1 teaspoon white wine vinegar
1 tablespoon honey
1 teaspoon olive oil
salt
pepper
For the salad:
2 ounces of salad mix
2 tablespoons of store-bought croutons
3 cherry tomatoes, cubed
1 avocado, diced
How to Make Salmon Salad With Croutons
- Cook the salmon:
Place the salmon fillets into a baking dish, drizzle with the olive oil, season with salt and pepper and roast for 30 minutes at 380⁰F/190⁰C. - For the bacon:
Fry the bacon slices in a skillet over medium-high heat until crispy. - For the dressing:
Add the Greek yogurt, mayonnaise, white wine vinegar, honey, olive oil, salt, and pepper to a bowl. Mix them using a whisk. - For the salad:
Add the salad mix, croutons, cherry tomatoes, avocado, the cooked salmon and bacon in a bowl. Top with the dressing. Mix everything and serve.
