How to Make Minced Meat and Mozzarella Stuffed Summer Squash
- Preheat the oven to 360 degrees F/180 degrees C.
- First, cook the minced meat. Heat the vegetable oil in a frying pan. Add the minced meat. Cook until the meat looses its vibrant pink color and turn brown. Season with salt and pepper.
- Cut the top of each summer squash. Using a knife, cut the squash flesh all around. Using a teaspoon, scrape out the squash interior.
- Put both squashes in an oven tray. Fill with the meat mixture, add one layer of sausages, top with mozzarella, and then add another layer of sausages.
- Bake for 25 minutes.
