The lemon goes very well with the sweetness of the salmon and the exotic flavor given by sage, rosemary, and oregano. Speaking of exotic, add some star anise in the mix. You will definitely feel its flavor!

Ingredients Needed for Roasted Salmon With Herbs and Lemon

5 grape tomatoes
1 lemon, sliced
salt
oregano
parsley
sage
rosemary
2 tablespoons of olive oil
5 ounces of salmon
4 star anise
½ orange
3 yolks

How to Make Roasted Salmon With Herbs and Lemon

  1. Preheat the oven to 360°F/180°C.
  2. Slice the grape tomatoes in halves.
  3. Heat a skillet and add the lemon slices and a pinch of salt.
  4. Cook them for about 1 minute, until they turn slightly brown.
  5. Use aluminum foil and add fresh oregano, parsley, sage, and rosemary.
  6. Drizzle with olive oil, a pinch of salt and add half of the cooked lemons.
  7. Place the salmon on top. Add the remaining lemon slice and put the star anises on top of them.
  8. Drizzle with olive oil, add tomato halves, and wrap the whole dish with the aluminum foil.
  9. Bake it in the oven for the next 25 minutes.
  10. Separately, squeeze the juice out of the orange.
  11. Mix it with egg yolks into a smooth sauce.
  12. Add the sauce into a bowl. Place the bowl on top of a saucepan filled with warm water.
  13. Continuously stir on heat for about 1 minute or so.
  14. When sauce reaches the consistency desired, turn off the heat, and serve the sauce with the salmon.
