Ingredients Needed for Grilled Salmon With Aromatic Mushrooms

2 tablespoons of olive oil
1 teaspoon seven spice
1 tablespoon balsamic vinegar
salt
3 bay leaves
3 rosemary sprigs
7 ounces of mushrooms, halved
2 tomatoes, halved
1 lemon, halved
1 lime, halved
1 red onion, quartered
2 celery sticks
10 ounces of salmon (2 fillets)

How to Make Grilled Salmon With Aromatic Mushrooms

  1. Add the tablespoon of olive oil, seven spice, balsamic vinegar, salt, bay leaves, the leaves from one rosemary sprig, and the mushrooms to a zip bag. Lock the bag, shake it, then marinate the mushrooms for 30 minutes.
  2. Heat and grease your grill with olive oil. Place the marinated mushrooms on it. Also, add the halved tomatoes, lemon, lime, celery sticks, and salmon fillets, skin-side down. Season the fish with salt and pepper, and place one rosemary sprig on each. Grill for 12 minutes on all sides.
  3. Remove the fish and vegetables from the grill. Peel the tomatoes and add them to a food processor, along with the grilled onion, celery, the remaining olive oil, salt, and pepper. Mash them.
  4. Serve the grilled salmon with mushrooms and tomato sauce.
