Gouda Walnut Salad with Mint Vinaigrette

Looking for some healthy greens to fit into your healthy routine? Try this gouda and walnut salad to which you can feel free to add almost everything green: your favorite lettuce, endives, cabbage, and even tomatoes. The salad goes well with a mint vinaigrette.

Ingredients


For the salad:

4 ounces of salad mix
¼ small red cabbage, head, shredded
1 tomato, sliced
1 endive
2 ounces of walnut
5 ounces of gouda, cubed

For the mint vinaigrette:

3 tablespoons of vegetable oil
2 tablespoons of lemon juice
1 tablespoon balsamic glaze
5 fresh mint leaves, chopped
salt

For garnishing:

1 small pear, sliced
2 tablespoons of crumbled goat cheese

Steps

  1. For the salad:
    Add the salad mix, cabbage, tomato, endive, walnuts and gouda cheese in a bowl. Mix them using your hands.
  2. For the mint vinaigrette:
    Add the vegetable oil, lemon juice, balsamic glaze and chopped mint to a small bowl. Season with salt and mix.
  3. Serve the gouda and walnut salad with the mint vinaigrette and garnished with pear slices and crumbled goat cheese.
