½ cup breadcrumbs
3 tablespoons of parmesan, grated
½ cup flour
2 eggs
14 ounces of pork tenderloin
vegetable oil for frying
1 cup tomato juice
2 basil leaves
16 mozzarellas pearls

How to Make Crispy Pork Cutlet in Tomato Sauce

  1. Preheat the oven to 330 degrees F/165 degrees C.
  2. Mix the breadcrumbs with the parmesan.
  3. Whisk the eggs.
  4. Slice horizontally the pork tenderloin.
  5. Coat each slice of pork with flour, whisked eggs, and breadcrumbs and parmesan mixture.
  6. Heat the vegetable oil in a skillet, and fry the pork pieces on both sides.
  7. Pour the tomato sauce in a square ceramic baking dish.
  8. Put the fried pork in the tomato sauce and dip it in the sauce.
  9. Add the basil leaves and the mozzarella pearls.
  10. Bake the dish for 20 minutes.
