9 ounces of cauliflower
1 shallot, minced
2 tablespoons of ghee
⅓ cup organic mascarpone
1 teaspoon lemon zest
1 teaspoon fresh herbs
1 teaspoon lemon juice
2 tablespoons of organic parmesan, grated
How to Cook Cheesy Cauliflower Mash
- Add the cauliflower florets to the mixer bowl and crush them.
- Transfer to a bowl, add the shallot and ghee, then mix using a spatula.
- Microwave for 5 minutes. Remove from oven and add the mascarpone. Mix more until even.
- Microwave for 1 minute. Remove from oven and add the lemon zest, herbs, lemon juice, and parmesan.
