Ingredients Needed for Waffles With Blueberries and Ricotta Cream

1 cup ricotta
1 tablespoon powdered sugar
1 lemon
1 pound blueberry, frozen
1 cup water
3 tablespoons of honey
10 ounces of greek yogurt
3.5 ounces of butter, melted
2 eggs
1 cup whole wheat flour
½ cup spelt flour
¼ cup sugar
1 teaspoon baking soda
1 teaspoon baking powder
salt
1 teaspoon lemon zest, shredded

How to Make Waffles With Blueberries and Ricotta Cream

  1. First, add the ricotta in a large bowl. Add the powdered sugar, squeeze the juice out of half a lemon and add 1/2 teaspoon of lemon zest. Use a tablespoon and mix everything until smooth. Set it aside.
  2. Next, heat a skillet over medium heat, add the blueberries and a cup of water. Bring everything to a boil. Squeeze the juice out of the remaining lemon half. Add the honey and cook until bubbles appear on the surface and the mixture thickens. Set aside.
  3. Set up your large blender. Add the greek yogurt, melted butter, eggs, whole wheat and spelt flour, sugar, baking soda, baking powder, and salt. Blend until smooth. This will be the waffle mixture.
  4. Grease your waffle iron with olive oil. Pour around 1 ladle of the mixture into the waffle slot. Make the waffles according to the instructions on the waffle maker.
  5. Serve them topped with ricotta cream and blueberry jam.

½ zucchini
½ yellow bell pepper
½ red bell pepper
½ eggplant
3 leeks
1 endive
2 ounces of halloumi cheese
1 ounce blueberry
1 tablespoon honey
1 tablespoon vinegar
1 tablespoon olive oil
1 lettuce leaves
½ pomegranate

  1. Slice the zucchini, cut the bell peppers into quarters, slice the eggplant, and cut the endive into halves.
  2. Grill the vegetables.
  3. Slice the Halloumi cheese and grill it.
  4. Put the blueberries, honey, vinegar, and olive oil in a blender in order to make a sauce.
  5. Remove the pomegranate seeds.
  6. Place the lettuce leaves on a large plate.
  7. Add the grilled vegetables and grilled cheese.
  8. Pour blueberry sauce on top and sprinkle the pomegranate seeds.
  9. Serve warm!
