Ingredients Needed for Sweet Potato Tots
3 sweet potatoes
2 garlic cloves
1 onion, chopped
½ cup breadcrumbs
1 egg
salt
pepper
1 teaspoon coriander powder
¼ cup Cheddar, shredded
2 ounces of baby spinach
How to Make Sweet Potato Tots
- Preheat the oven to 360 degrees F/180 degrees C.
- Line a baking sheet with parchment paper and lay the sweet potatoes over it. Pinch them with a fork.
- Slide the tray into the oven for the next 45 minutes.
- Cut the potatoes when ready and scoop the potatoes.
- Add them in a blender along with breadcrumbs, egg, spinach, and Cheddar.
- Season with salt, pepper, and thyme.
- Blend everything until smooth.
- Preheat the oven to 360 degrees F/180 degrees C.
- Shape the mixture into patties.
- Line a baking tray with parchment paper and lay the patties on it. Slide it into the oven for the next 30 minutes.
- Serve the tots with your favorite dip!
