1 cashew
1 tablespoon pine nut
1 cup cooked basmati rice

How to Make Beef Koftas With Cashews and Pine Nuts Basmati Rice

  1. Preheat the oven to 360 degrees F/180 degrees C.
  2. Add the ground beef to a bowl.
  3. Add the red onion, parsley, salt by taste, the cinnamon, and seven spices.
  4. Blend everything together with your hand.
  5. Use your hands to mold a quarter of the beef mixture around a wooden skewer into a 2.5 inch (6 cm) pointed-ended sausage.
  6. Repeat with the remaining beef mixture and skewers. Make 4 koftas.
  7. Drizzle some vegetable oil on a small ceramic baking tray.
  8. Place the koftas into the tray, then transfer to the oven and roast for 30 minutes.
  9. Meanwhile, drizzle some vegetable oil in a skillet, then add the butter.
  10. When the butter is melted, throw in the cashews and pine nuts.
  11. Stir for about 1 minute, then add the cooked rice.
  12. Season with salt and pepper.
  13. Serve the koftas with the basmati rice side.

How to Make Meatball Bites

  1. Preheat the oven to 380 degrees F/190 degrees C.
  2. Cut the mozzarella into small cubes.
  3. Roll out the puff pastry using a rolling pin. Cut the puff pastry sheet into 8 squares (1.5-inch/4 cm side).
  4. Divide the ground beef into 8 equal quantities.
  5. Shape 8 meatballs and place in the middle of each one some mozzarella.
  6. Coat the meatballs in puff pastry square sheets.
  7. Whisk the egg and the milk and make some egg wash.
  8. Fill a large pot with water and bring it to a boil.
  9. Sink the balls in boiling water for 1-2 minutes, then remove and place them on a baking tray.
  10. Prick them with a fork, then coat them with egg wash.

How to Make Meatball Stuffed Bread Loaf

  1. Preheat the oven to 360 degrees F/180 degrees C.
  2. Add the minced meat in a bowl. Add salt, pepper, garlic powder, and dried oregano.
  3. Add the egg and breadcrumbs.
  4. Add the parmesan.
  5. Mix everything and shape the meatballs using your hands. Make about 6-8 meatballs.
  6. Heat vegetable oil in a skillet and fry the meatballs on all sides until brown. When ready, set them aside.
  7. Put the tomato paste in other skillet, on medium heat.
  8. Add salt and pepper. If you want a thinner sauce, you can add 2-3 tablespoons of water. Simmer for about 5-7 more minutes, then set it aside.
  9. Cut the top crust of the bread and scoop out the inside.
  10. Pour the tomato sauce into the bread loaf, lay the meatballs, then top everything with shredded mozzarella.
  11. Lay a baking tray with a parchment paper sheet and place the stuffed loaf on it.
  12. Transfer the bread loaf to the oven and bake it for 20 minutes.
  13. When ready, let it cool down a little, then serve!

  2. Separate the mixture into 2 patties, about 0.4 inches (1 cm) thick and 4 inches (10 cm) in diameter.
  3. Add the mozzarella cubes over one of the patties, and use the remaining one to top it. Press the top and sides to release the air.

  1. You can start with the Bechamel sauce.
  2. Heat a saucepan over medium-low heat and start melting the butter. Add the flour and stir until smooth.
  3. Cook the mixture on medium heat for about 6-7 minutes, until it has a light, golden color.
  4. Separately, heat the milk in a different pan, until just about to boil. Slowly add the hot milk in the butter mixture, whisking continuously until very smooth.
  5. Cook for 10 more minutes, while stirring, and then remove from the heat. Season the sauce with salt and nutmeg and leave it aside.
  6. Preheat the oven to 360°F/180°C.
