This is not Tschirky’s original Waldorf salad. Instead, we played a little with the ‘classical’ recipe. We kept the walnuts, apples, and celery, but we substituted grapes with pineapple and tossed cognac-soaked dried fruits into the mix. No mayonnaise! And no bed of lettuce or other leafy greens, this time. Try it. It’s good!
Have you ever tried halva? Actually, there are various types of halva and they are all delicious! You can easily make a simple sunflower seed halva yourself! It doesn’t require much in the way of skill. It’s all about dry-roasting sunflower seeds, mixing them with powdered sugar and butter, flavoring them with vanilla extract, and then forgetting them in the refrigerator for about 3 hours. The actual time spent in the kitchen: about 15 minutes.
You may have heard about the French dish terrine. Well, this one has nothing to do with that savory dish. Instead, it honors the citrus fruits by bringing orange, grapefruit, tangerine, and lemon together inside a loaf pan. We cover them with a star anise-flavored sweet mixture of white wine and peach champagne, then „forget” about it in the refrigerator for 4 hours.
This dish is specific not only to Mexico but to the entire Pacific coast of Latin America! This healthy and nutritious recipe was and still is quite popular. No wonder, thanks to the fish fillets and their flavor, brought out by the acidic and refreshing hints of grapefruit and lemon, which are doing the heavy lifting. Please eat this fresh!
